Overall, it really just depends on what time you apply. I applied right before summer and they were in need of a lot of people. The interview process was super simple. One employee asks you around 5-6 questions and I was hired by the end of the interview.

What are three questions your previous co-workers would use to describe you?
phone interview, called right between the time frame of scheduled interview. questions were very direct, mention that they might be repetitive to questions on application but they just want to confirm.
A very straightforward, screening process and in person interview. When in person, mostly discussion about availability and preferred positions. At the time they were strict about tattoos and facial piercings.

Interview
After some time in the waiting area of the talent office in the theme park, candidates are brought into an interview room to meet with whichever park staff are interviewing that role.
