Bring in resume and interview in person with manager, talk about previous experience in industry. Alittle knowledge about itallian cuisine goes a long way. Quick interview and relatively low stress atmosphere the managers are nice.

Interview
First I was given a short written test on Italian food and wine. When I finished, the owner met with me. He reviewed my answers and my resume. We discussed my bartending experience and his vision for the restaurant. The owner discussed Italian food and sort of quizzed me in a friendly way.
